we’re constantly working on new and experimental products. sometimes we’re able to release small batches of these, usually available only at the distillery.
current releases
noce pecan – inspired by a traditional italian walnut liqueur, we made noce pecan by taking green, unripened pecans from yegua creek farms and steeping them for a year in a neutral spirit. we also added fresh lemon peel for the final six months of the infusion. the resulting digestivo style bitter liqueur is a complex blend of herbaceous, nutty pecan character and bright citrus. batch 3 release: 9/12/19

farmhouse liqueurs – part of our farmhouse fruit liqueur series. our neighbors and friends at jester king make beautiful fruited wild ales. afterwards, the fruit that’s leftover has added layers of complexity from fermentation process, derived from both the fruit and their mixed cultures of yeast and bacteria. we take that fruit and use it to make a liqueur that has a completely unique flavor.
phobos’ companion – collaboration with jester king brewery, meant to be combined with their half of the project, deimos’ companion. the beer and spirit together make our version of a michelada. phobos’ companion is infused with three different chiles (arbol, cascabel, and pasilla), horseradish, black peppercorns, celery seed, and arame (a type of seaweed).
eris malus eau de vie batch 1 – unaged apple brandy made from wild fermented and barrel aged cider from our neighbors and friends at argus cidery.
